  • 1 teaspoon of ground cumin.
  • 400 g can of chopped tomatoes.
  • 1 tablespoon of tomato purée.
  • 300 ml of chicken stock low salt.
  • 1 teaspoon of vegetable oil or low-calorie spray.
  • A large handful of fresh coriander chopped.
  • Salt and black pepper to taste.

Instructions
 

Prepare the Base

  • Heat the oil in your large pan over medium heat. Add the chopped onions and cook slowly. Stir them often until they are soft and golden brown. This takes about 10 minutes but adds great flavor.

Add Aromatics and Spices

  • Stir in the garlic, ginger, and curry powder. Add the ground cumin and a pinch of pepper. Cook for two minutes until the room smells amazing. Do not let the spices burn.

Brown the Chicken
