Ingredients
  

Crust:

  • cups flour
  • ½ teaspoon salt
  • cup cold butter
  • 3-4 tablespoons cold water

Filling:

  • ½ cup sugar
  • cup cornstarch
  • ½ teaspoon salt
  • cups milk
  • 3 egg yolks
  • 3 tablespoons butter
  • 1 teaspoon vanilla
  • ¼ teaspoon nutmeg

Instructions
 

  • Mix flour and salt in bowl.
  • Add cold butter and mix well.
  • Add water slowly until dough forms.
  • Roll dough and put in pie pan.
  • Bake crust at 425°F for 15 minutes.
  • Mix sugar, cornstarch, and salt in pot.
  • Add milk slowly while stirring.
  • Cook until thick, stirring constantly.
  • Mix egg yolks in separate bowl.
  • Add hot mixture to eggs slowly.
  • Cook for 2 more minutes.
  • Add butter, vanilla, and nutmeg.
  • Pour into baked crust.
  • Sprinkle nutmeg on top.
  • Cool in fridge for 4 hours.

Notes

  1. Use cold butter for better crust
  2. Stir constantly to avoid lumps
  3. Add hot mixture to eggs slowly
  4. Cool completely before serving
  5. Cover with plastic wrap when storing
