  • ½ cup onions

  • 1 tsp chili paste
  • 1 tbsp cilantro
  • Salt to taste

  • Add onions and sauté.
  • Add ginger and stir.
  • Add sliced chicken now.
  • Cook chicken until white.
  • Add lemongrass and mix.
  • Add mushrooms and stir.
  • Pour broth into pot.
  • Add coconut milk next.
  • Add chili paste slowly.
  • Add fish sauce now.
  • Add tomatoes and cook.
  • Simmer soup until fragrant.
  • Add lime juice gently.
  • Adjust salt to taste.
  • Top soup with cilantro.
  • Serve warm in bowls.
