Instructions
 

  • Preheat oven to 350°F.
  • Line tray with parchment paper.
  • Whisk eggs and sugar until fluffy.
  • Sift flour, cocoa, and salt.
  • Fold dry mix into eggs gently.
  • Spread batter on tray evenly.
  • Bake for ten minutes only.
  • Roll cake with parchment warm.
  • Cool cake completely.
  • Beat mascarpone and sugar smooth.
  • Fold in whipped cream softly.
  • Unroll cake gently and brush coffee.
  • Spread cream filling thinly.
  • Roll cake again tightly.
  • Dust cocoa on top.
  • Chill cake one hour.
