Peel all garlic cloves carefully.
Cut off root ends with knife.
Wash garlic under cold water.

Add salt to garlic cloves.
Wait 2 hours, then rinse salt off.
Mix vinegar, sake, mirin in pot.
Add sugar and salt to pot.
Heat mixture until it boils.
Stir until sugar melts completely.
Let liquid cool down completely.
Put garlic in clean glass jar.
Pour cooled liquid over garlic.
Close jar tightly.
Store in cool, dark place.
Wait 2 weeks before eating.
