Ingredients
  

For Garlic:

  • 2 pounds fresh garlic
  • 2 tablespoons salt

For Pickling:

  • 1 cup rice vinegar
  • 1/2 cup sake
  • 1/4 cup mirin
  • 3 tablespoons sugar
  • 2 tablespoons salt

Instructions
 

  • Peel all garlic cloves carefully.
  • Cut off root ends with knife.
  • Wash garlic under cold water.
  • Dry garlic with clean towel.
  • Add salt to garlic cloves.
  • Wait 2 hours, then rinse salt off.
  • Mix vinegar, sake, mirin in pot.
  • Add sugar and salt to pot.
  • Heat mixture until it boils.
  • Stir until sugar melts completely.
  • Let liquid cool down completely.
  • Put garlic in clean glass jar.
  • Pour cooled liquid over garlic.
  • Close jar tightly.
  • Store in cool, dark place.
  • Wait 2 weeks before eating.
