Ingredients
  

For the Cake:

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 1/3 cups oil
  • 4 eggs
  • 2 cups sugar
  • 3 cups grated carrots
  • 1 cup walnuts optional

For the Frosting:

  • 8 oz cream cheese soft
  • 1/2 cup butter soft
  • 4 cups powdered sugar
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt

Instructions
 

  • Heat oven to 350°F.
  • Grease two cake pans well.
  • Mix flour, baking soda, cinnamon, salt together.
  • Add nutmeg to flour mixture.
  • Beat oil and eggs together.
  • Add sugar to oil mixture slowly.
  • Mix dry ingredients into wet ingredients.
  • Stir in grated carrots and nuts.
  • Pour batter into prepared pans equally.
  • Bake for 40-45 minutes until done.
  • Cool cakes completely on wire racks.
  • Beat cream cheese and butter until fluffy.
  • Add powdered sugar, vanilla, and salt.
  • Frost the cooled cake layers.
