Ingredients
  

  • 2 cups all-purpose flour
  • 3 large eggs
  • ½ tsp salt
  • 2 tbsp olive oil
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ cup mozzarella shredded
  • 2 tbsp fresh basil chopped
  • 1 tsp black pepper
  • 1 tsp nutmeg
  • 3 tbsp butter
  • 2 garlic cloves minced
  • ½ cup heavy cream
  • ½ cup vegetable broth

Instructions
 

  • Place flour on a clean surface.
  • Make a well in the center.
  • Crack eggs into the well.
  • Add salt and olive oil.
  • Mix until dough forms.
  • Knead dough until smooth.
  • Cover with towel, let rest.
  • Roll dough thin with pin.
  • Cut into small squares.
  • Mix ricotta, Parmesan, mozzarella, basil.
  • Add pepper and nutmeg, combine.
  • Place filling in pasta square.
  • Pinch corners into small pouch.
  • Seal edges tightly.
  • Boil water in large pot.
  • Add salt generously.
  • Drop sacchetti gently.
  • Cook until pasta floats.
  • In pan, melt butter.
  • Add garlic and cream.
  • Stir in broth, simmer.
  • Drain pasta, add sauce.
  • Toss gently to coat.
  • Serve hot with garnish.

Notes

  • Use fresh eggs for better dough texture.
  • Do not overfill pasta squares.
  • Seal edges with water if needed.
  • Cook pasta until just al dente.
  • Add grated cheese for richer sauce.
