Ingredients
  

  • 1 pork tenderloin about 1 lb
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp garlic minced
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tsp fresh thyme
  • 1 tsp lemon juice

Instructions
 

  • Pat pork dry. Season with salt and pepper.
  • Heat skillet with oil and butter.
  • Sear pork on all sides until golden.
  • Remove pork. Set aside to rest.
  • Add garlic to pan. Stir for 30 seconds.
  • Pour in cream and whisk until smooth.
  • Add Dijon mustard and thyme. Stir gently.
  • Simmer sauce for 3 minutes on low.
  • Return pork to pan. Coat with sauce.
  • Simmer for 10 minutes until cooked.
  • Squeeze lemon juice. Stir sauce well.
  • Slice pork. Serve with Dijon cream sauce.
