Ingredients

  • Pork shoulder 3–4 kg
  • 3 tbsp brown sugar
  • 2 tbsp paprika
  • 1 tbsp black pepper
  • 1 tbsp salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 cup apple juice
  • 2 tbsp mustard
  • 1 cup BBQ sauce
  • 2 tbsp olive oil

Instructions

Prepare the Pork

  • Take the pork shoulder out of the fridge. Let it sit for 30 minutes. Pat it dry using paper towels. This helps the seasoning stick better. Trim extra fat if needed, but keep some for flavor and moisture.

Apply Mustard Base

  • Spread mustard all over the pork. Use your hands or a brush. This step helps the rub stick well. Do not worry. The mustard taste will not be strong after cooking.

Make the Dry Rub

  • In a bowl, mix brown sugar, paprika, salt, pepper, garlic powder, onion powder, and cayenne. Stir well until fully combined. This mix gives the pork a rich BBQ flavor.

Season the Meat

  • Rub the spice mix all over the pork. Press it gently so it sticks well. Cover every side evenly. Let the pork rest for at least 15 minutes before cooking.

Preheat the Pit Boss Grill

  • Set your Pit Boss grill to 225°F (107°C). Let it preheat properly. A steady temperature is very important for this Pit Boss Pulled Pork Recipe.

Start Smoking the Pork

  • Place the pork on the grill grates. Close the lid. Let it smoke slowly. Do not open the lid too often. This keeps the heat stable.

Spray with Apple Juice

  • After two hours, spray the pork with apple juice. This keeps it moist. Repeat every hour. It also adds a light sweet flavor to the meat.

Wrap the Pork

  • When the internal temperature reaches 165°F (74°C), remove the pork. Wrap it tightly in foil. Add a little apple juice inside before sealing.

Continue Cooking

  • Put the wrapped pork back on the grill. Cook until it reaches 203°F (95°C). This step makes the meat very soft and easy to shred.

Rest the Meat

  • Take the pork off the grill. Let it rest for at least 30 minutes. This helps the juices settle inside the meat.

Shred the Pork

  • Use forks or gloves to pull the meat apart. It should shred easily. Mix in some BBQ sauce for extra flavor.

Serve and Enjoy

  • Serve your pulled pork hot. Add it to buns, tacos, or plates. This is how to enjoy your homemade BBQ.

Notes

  • Always cook low and slow for best results
  • Use wood pellets like hickory or apple for flavor
  • Add butter when wrapping for extra richness
  • Try different BBQ sauces for variety
  • Let the pork rest longer for better texture
  • Use leftovers in sandwiches or wraps
