- 2 cups cooked chicken shredded
- 2 cans white beans drained and rinsed
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 tablespoon olive oil
- 2 cups chicken broth
- 1 cup milk or light cream
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- ½ teaspoon paprika
- Salt to taste
- Black pepper to taste
- 1 small can green chilies
- ½ cup corn optional
- Fresh cilantro for garnish
Cook the Onion and Garlic
Add Spices and Chilies
Add cumin, chili powder, paprika, salt, and black pepper. Also add green chilies. Stir well and cook for another 10 minutes for rich flavor.
- Use rotisserie chicken for quick cooking
- Add jalapeños for extra spice
- Use heavy cream for a richer texture
- Mash some beans for thicker chili
- Add lime juice for a fresh taste
