Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 bell pepper chopped
  • 2 cups cooked shredded chicken
  • 1 can 400g diced tomatoes
  • 1 can 400g black beans, drained
  • 1 cup corn kernels
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 lime juice

For topping:

  • Tortilla strips
  • Avocado slices
  • Fresh cilantro
  • Shredded cheese
  • Sour cream

Instructions

Heat the Oil

  • Heat olive oil in a large pot over medium heat. Once warm, add chopped onions. Cook for about 3 minutes until soft and slightly golden. Stir often to avoid burning.

Add Garlic and Pepper

  • Add minced garlic and chopped bell pepper. Cook for another 2–3 minutes. The smell will become rich and warm. This step builds the base flavor of the soup.

Add Spices

  • Sprinkle chili powder, cumin, and paprika into the pot. Stir well for about one minute. Cooking spices in oil helps release their full aroma and taste.

Add Tomatoes and Beans

  • Pour in diced tomatoes and black beans. Mix everything together. Let it cook for a few minutes so the flavors blend nicely and become deeper.

Add Broth and Corn

  • Add chicken broth and corn. Stir gently. Bring the soup to a soft boil. This step brings all ingredients together into a comforting base.

Add Chicken

  • Add shredded chicken into the pot. Mix well. Let it simmer for 10–15 minutes. The chicken will soak up all the spices and flavors.

Add Lime and Season

  • Squeeze fresh lime juice into the soup. Add salt and pepper to taste. Stir well. This final touch brightens the whole dish beautifully.

Prepare Tortilla Strips

  • Cut tortillas into thin strips. Fry them in a small pan until crispy. Place on paper towels to remove extra oil. These add crunch to your soup.

Serve and Garnish

  • Ladle soup into bowls. Top with tortilla strips, avocado, cheese, and cilantro. Add sour cream if you like. Serve hot and enjoy every bite.

Notes

  • Use rotisserie chicken for quick cooking
  • Add jalapeños if you like spicy food
  • Swap black beans with kidney beans
  • Use vegetable broth for a lighter taste
  • Add a little cream for a richer texture
  • Bake tortilla strips instead of frying
