Ingredients
  

  • 8 oz wide rice noodles
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 2 cloves garlic minced
  • 1 egg
  • 1 cup Chinese broccoli chopped
  • 5 oz chicken beef, or tofu
  • 2 tbsp vegetable oil
  • Pinch of white pepper

Instructions
 

  • Soak rice noodles until soft. Drain well.
  • Heat oil in wok on high.
  • Add garlic and stir until golden.
  • Add meat or tofu. Cook until browned.
  • Push meat aside. Crack egg. Scramble lightly.
  • Add noodles and sauces. Toss until coated.
  • Add broccoli. Stir-fry until just tender.
  • Season with sugar and pepper. Mix well.
  • Taste and adjust soy if needed.
  • Serve hot with lime wedges.

Notes

Use fresh wide noodles if available.
Cook over very high heat.
Do not over-soak dried noodles.
Add chili flakes for extra heat.
Use a seasoned wok for smoky flavor.
