wide rice noodles

dark soy sauce

tbsp
light soy sauce

tbsp
oyster sauce

tsp
sugar

cloves
garlic
minced

egg
1
cup
Chinese broccoli
chopped

chicken
beef, or tofu

tbsp
vegetable oil
Pinch
of white pepper
Instructions
Soak rice noodles until soft. Drain well.
Heat oil in wok on high.
Add garlic and stir until golden.
Add meat or tofu. Cook until browned.
Push meat aside. Crack egg. Scramble lightly.
Add noodles and sauces. Toss until coated.
Add broccoli. Stir-fry until just tender.
Season with sugar and pepper. Mix well.
Taste and adjust soy if needed.
Serve hot with lime wedges.
Notes
Use fresh wide noodles if available.
Cook over very high heat.
Do not over-soak dried noodles.
Add chili flakes for extra heat.
Use a seasoned wok for smoky flavor.
