Ingredients
  

Crust

  • 1 ½ cups graham cracker crumbs
  • 5 tbsp melted butter
  • 2 tbsp sugar

Cheesecake Filling

  • 24 oz cream cheese softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 eggs
  • 1 tsp vanilla extract

Pecan Topping

  • 1 cup brown sugar
  • ½ cup heavy cream
  • ½ cup chopped pecans
  • 4 tbsp butter
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 325°F.
  • Mix crumbs, butter, sugar for crust.
  • Press crust into pan base.
  • Bake crust for 10 minutes.
  • Cool crust on rack.
  • Beat cream cheese until smooth.
  • Add sugar and mix well.
  • Add sour cream and eggs.
  • Stir in vanilla extract gently.
  • Pour filling over crust.
  • Bake for 50 minutes.
  • Turn off oven and rest cheesecake.
  • Cool cheesecake completely.
  • Heat sugar, cream, butter in saucepan.
  • Stir until smooth and thickened.
  • Add pecans and vanilla.
  • Pour topping on cheesecake.
  • Chill in fridge for 4 hours.
  • Slice and serve chilled.

Notes

  • Use room-temperature cream cheese.
  • Do not overmix the batter.
  • Cool cheesecake slowly to prevent cracks.
  • Make topping after cheesecake cools.
  • Chill overnight for best texture.
