Ingredients
  

  • 2 cups cooked chicken shredded
  • 12 oz spaghetti cooked
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes with green chilies
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 cups Monterey Jack cheese shredded
  • 1 cup cheddar cheese shredded
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped (garnish)

Instructions
 

  • Boil spaghetti until tender. Drain well and set aside.
  • Heat olive oil in a pan. Add onion and garlic.
  • Cook until onion is soft and fragrant.
  • Stir in diced tomatoes and green chilies. Cook briefly.
  • Add mushroom soup, chicken broth, and cream. Mix well.
  • Season with salt and black pepper. Stir thoroughly.
  • Add shredded chicken to the sauce. Stir until coated.
  • Fold in cooked spaghetti and mix until well combined.
  • Transfer mixture into a greased baking dish.
  • Sprinkle Monterey Jack and cheddar cheese on top.
  • Bake at 350°F for 20 minutes until cheese melts.
  • Remove, garnish with parsley, and serve hot.
