  • 2 cups all-purpose flour
  • 2 cups granulated sugar

For Frosting:

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions
 

  • Preheat oven to 350°F.
  • Grease and line the baking pan.
  • Mix flour, sugar, baking soda, powder, salt, and spices.
  • Add oil and eggs to the dry mixture.
  • Blend until smooth and well combined.
  • Stir in carrots, pineapple, pecans, and vanilla.
  • Pour batter into prepared pan.
  • Bake for 40 minutes until golden.
  • Cool on a rack completely.
  • Beat cream cheese and butter.
  • Add powdered sugar and vanilla.
  • Mix until frosting is fluffy.
  • Spread frosting over cooled cake.
