Ingredients
  

  • 2 cups grated carrots
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup chopped walnuts
  • 1 cup raisins optional
  • 1 tsp vanilla extract

For Frosting:

  • 8 oz cream cheese
  • ½ cup butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F.
  • Grease and flour baking pans.
  • Mix flour, baking soda, powder, cinnamon, nutmeg, salt.
  • In bowl, whisk eggs, sugar, oil, and vanilla together.
  • Add grated carrots, raisins, and walnuts.
  • Slowly fold in dry mixture until smooth.
  • Pour batter into pans evenly.
  • Bake for 35–40 minutes until golden.
  • Cool on rack completely before frosting.
  • For frosting, beat cream cheese, butter, sugar, vanilla.
  • Spread frosting between layers and over cake.
  • Garnish with nuts if desired.
