Method
- Clean and slice all mushrooms thin.
- Heat oil in large pot.
- Cook mushrooms until brown. Remove them.
- Add butter to same pot.
- Cook onions until soft.
- Add garlic and cook one minute.
- Add flour and stir well.
- Slowly add broth while stirring.
- Add mushrooms and thyme back.
- Cook for 20 minutes.
- Blend half the soup.
- Add cream and sherry.
- Season with salt and pepper.
- Cook 5 more minutes.
