150gplain flour
75gunsalted butterchilled and cubed
100ggolden caster sugarplus 2 extra tablespoons for the fruit
1teaspoonground cinnamon
1tablespoonwater
Optional: A handful of rolled oats for extra crunch
Optional: A pinch of sea salt
Instructions
Prepare the Apples
Peel and core your apples carefully using a sharp knife. Cut them into thick wedges or 2cm chunks. Do not make them too small or they will vanish. Place them in your large baking dish.
Sweeten the Fruit
Sprinkle two tablespoons of caster sugar over the raw apple chunks. Add a teaspoon of ground cinnamon for a warm, woody flavor. Toss everything together so the apples are evenly coated.
Pre-Cook the Apples
Place the baking dish in the oven for 10 minutes at 190°C. This softens the fruit slightly before you add the topping. It ensures the apples are perfectly tender when the crumble is golden.
Rub the Flour and Butter
Put the flour and chilled butter cubes into a large bowl. Use your fingertips to rub them together gently. Stop when the mixture looks like coarse breadcrumbs. Keep some larger lumps for texture.
Add the Sugar and Oats
Stir the 100g of golden caster sugar into the flour mixture. If you like extra crunch, add a handful of rolled oats now. Toss them together lightly with a spoon or your hands.
Assemble the Crumble
Take the warm apples out of the oven carefully. Pour the crumble mixture over the top of the fruit. Do not press it down or it will become heavy and dense.
Bake Until Golden
Slide the dish back into the oven for 35 to 40 minutes. Wait until the top is golden brown and the fruit juice bubbles. The smell in your kitchen will be absolutely incredible.
Let it Rest
Remove the dish from the oven and set it on a rack. Let it sit for 5 minutes before serving to the family. This allows the fruit syrup to thicken up slightly.
Notes
Use Cold Butter: Always use chilled butter for the topping. Warm butter makes the crumble greasy instead of light and crunchy.
Add Nuts: Stir in some chopped hazelnuts or pecans for a nutty flavor.
Try Different Fruits: Mix in blackberries or rhubarb for a colorful twist.
Spice it Up: Add a pinch of ground ginger to the apples for extra warmth.
Zest it: Grate some lemon zest into the apples to brighten the taste.
Salt Matters: A tiny pinch of sea salt in the topping brings out the sweetness.
