Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 1 large onion chopped
  • 1 green bell pepper chopped
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 1 can diced tomatoes 14 oz
  • 6 cups chicken broth
  • 1 lb chicken thighs cooked and shredded
  • 1/2 lb smoked sausage sliced
  • 1 cup okra sliced
  • 2 tsp paprika
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 2 bay leaves
  • 1 tbsp Worcestershire sauce
  • Cooked white rice for serving
  • Fresh parsley for garnish

Instructions

Make the Roux

  • Heat oil in a large pot over medium heat. Slowly add flour and whisk nonstop. Keep stirring until it becomes dark brown. This step builds the strong base flavor of gumbo. Do not rush or stop stirring.

Cook the Vegetables

  • Add onion, celery, and bell pepper into the roux. Stir well and cook until soft. This mix is called the holy trinity of Southern cooking. It gives gumbo its classic taste and aroma.

Add Garlic and Spices

  • Add garlic, paprika, thyme, salt, pepper, and cayenne. Stir everything gently so spices mix well. Cook for one minute so the flavors wake up and become fragrant and warm.

Add Broth and Tomatoes

  • Pour in chicken broth slowly while stirring. Add diced tomatoes and bay leaves. Mix well and bring it to a gentle boil. Then reduce heat and let it simmer slowly.

Add Meat and Sausage

  • Add cooked chicken and smoked sausage slices. Stir carefully so everything blends together. Let it simmer for 30–40 minutes so the flavors become rich and deep.

Add Okra and Worcestershire Sauce

  • Add okra and Worcestershire sauce into the pot. Stir and cook for 10–15 minutes. Okra helps thicken the gumbo naturally and gives it a smooth texture.

Final Taste and Simmer

  • Taste the gumbo and adjust seasoning if needed. Let it simmer a little longer. This helps all flavors come together and makes the dish taste balanced and rich.

Serve and Enjoy

  • Serve hot over white rice. Garnish with fresh parsley. Enjoy every warm and comforting bite of this homemade gumbo.

Notes

  • Stir roux slowly to avoid burning
  • Add shrimp for seafood gumbo variation
  • Use smoked paprika for deeper flavor
  • Let gumbo rest before serving
  • Add extra cayenne for more spice
  • Homemade stock gives better taste
  • More okra makes it thicker
