Ingredients

  • 8 high-quality pork sausages
  • 1 tablespoon sunflower oil
  • 2 medium onions thinly sliced
  • 2 red bell peppers deseeded and chopped
  • 2 garlic cloves finely minced
  • 1 teaspoon smoked paprika
  • 1 can 400g chopped tomatoes
  • 300 ml beef or chicken stock
  • 2 tablespoons tomato purée
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 can 400g butter beans, drained
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

Brown the Sausages

  • Heat the oil in your large casserole pot over medium heat. Add the pork sausages and fry them gently. Turn them frequently until they are golden brown all over. Remove them and set aside.

Sauté the Vegetables

  • Add the sliced onions and red peppers to the same pot. Cook them for about five minutes until they soften. The onions should look translucent and slightly sweet. Stir often to prevent burning.

Add Garlic and Spice

  • Stir in the minced garlic and the smoked paprika. Cook for just one minute until the aroma fills the room. Do not let the garlic turn brown or bitter. This adds the base flavor.

Mix in Liquids

  • Pour in the chopped tomatoes, stock, and tomato purée. Add the Worcestershire sauce and the dried oregano. Stir everything together until the sauce is smooth. Bring the liquid to a gentle simmer.

Return the Sausages

  • Put the browned sausages back into the pot with the sauce. Ensure they are mostly covered by the liquid. Reduce the heat to low and put the lid on. Simmer for twenty minutes.

Add the Beans

  • Stir in the drained butter beans. These add a wonderful creamy texture and extra protein. Let everything cook for another ten minutes without the lid. This helps the sauce thicken up beautifully.

Season and Serve

  • Taste the sauce carefully. Add salt and black pepper according to your preference. Sprinkle fresh parsley over the top for a pop of color. Your delicious Hairy Bikers’ Sausage Casserole Recipe is ready!

Notes

  • Choose good meat: Use sausages with a high meat content for the best flavor.
  • Add a kick: If you like heat, add a pinch of dried chili flakes.
  • Vegetarian option: You can use vegetarian sausages and vegetable stock instead.
  • Extra veggies: Stir in some sliced mushrooms or carrots for extra nutrition.
  • Deglaze the pan: Use a splash of red wine to scrape up the brown bits.
  • Slow cooker: You can cook this in a slow cooker for four hours on high.
