- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 shallot finely chopped
- 1 garlic clove minced
- 2 teaspoons Dijon mustard
- 2 tablespoons brandy
- ½ cup beef stock
- ¼ cup heavy cream
- 1 tablespoon Worcestershire sauce
- Fresh parsley chopped
Pat steaks dry using paper towels.
Season both sides well.
