Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 6 large ripe tomatoes chopped
  • 2 cups vegetable stock
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried basil
  • ½ cup heavy cream
  • Fresh basil leaves for garnish

Instructions
 

  • Heat oil in a pot.
  • Add onion and garlic, sauté until soft.
  • Stir in tomato paste and chopped tomatoes.
  • Cook for ten minutes, stirring occasionally.
  • Add stock, sugar, salt, and pepper.
  • Simmer the soup for fifteen minutes.
  • Blend the soup until smooth and creamy.
  • Stir in heavy cream and dried basil.
  • Simmer for two more minutes.
  • Garnish with fresh basil before serving.
