Ingredients
  

  • 1 pound jumbo lump crab meat
  • 1 large egg
  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon white pepper
  • 2 tablespoons fresh chives
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter
  • 2 tablespoons oil

Method
 

  1. Check crab meat for shells carefully.
  2. Put clean crab in large bowl.
  3. Keep crab pieces whole if possible.
  4. Mix egg and mayonnaise together.
  5. Add mustard and Worcestershire sauce.
  6. Add Old Bay and pepper.
  7. Mix wet ingredients well.
  8. Add chives to mixture.
  9. Pour over crab meat gently.
  10. Add breadcrumbs to crab.
  11. Mix everything very carefully.
  12. Make six equal patties.
  13. Put in fridge for 15 minutes.
  14. Heat butter and oil in pan.
  15. Cook crab cakes 4 minutes.
  16. Flip and cook 3 more minutes.
  17. Serve hot and enjoy!

Notes

  1. Use the best crab meat you can buy for this Faidley's crab cake recipe.
  2. Handle crab meat very gently to keep pieces whole.
  3. Chill patties before cooking so they stay together.
  4. Cook on medium-high heat only.
