Ingredients
  

For Chicken:

  • 3 lbs chicken pieces
  • 2 cups buttermilk
  • 2 eggs
  • 1 tablespoon hot sauce

For Coating:

  • 2 cups flour
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 6 cups oil for frying

Instructions
 

  • Mix buttermilk, eggs, and hot sauce together.
  • Put chicken in buttermilk mix for 4 hours.
  • Mix all coating ingredients in a plate.
  • Heat oil to 350°F.
  • Take chicken from buttermilk.
  • Cover each piece with flour mix completely.
  • Put chicken in hot oil carefully.
  • Fry for 12-15 minutes until golden brown.
  • Check temperature reaches 165°F inside.
  • Take out and drain on wire rack.

Notes

  1. Marinate Longer: Keep chicken in buttermilk overnight for better taste.
  2. Control Heat: Keep oil at 350°F for crispy results.
  3. Small Batches: Don't put too much chicken at once.
  4. Double Coat: Dip in buttermilk and flour twice for extra crunch.
