Ingredients
  

  • 300 g pasta penne or spaghetti works well
  • 200 g Brie cheese rind removed, sliced
  • 3 tbsp olive oil
  • 3 garlic cloves minced
  • 1 small onion finely chopped
  • 150 ml heavy cream
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish
  • Grated parmesan optional for topping

Instructions
 

  • Boil water with salt in a large pot.
  • Cook pasta until al dente, then drain.
  • Heat olive oil in a medium pan.
  • Add garlic and onion, sauté until soft.
  • Stir in thyme and season with pepper.
  • Lower heat and add sliced Brie cheese.
  • Pour in cream and stir until smooth.
  • Combine pasta with creamy Brie sauce.
  • Mix gently until pasta is well coated.
  • Serve hot, garnish with fresh parsley.

  • Always use fresh Brie for best results.
  • Remove the Brie rind for smooth texture.
  • Reserve pasta water to adjust sauce thickness.
