Ingredients

  • Elbow Macaroni: 1 pound 16 oz.
  • Sharp Cheddar Cheese: 3 cups shredded.
  • Monterey Jack Cheese: 1 cup shredded.
  • Whole Milk: 2 cups.
  • Evaporated Milk: 1 can 12 oz.
  • Butter: 4 tablespoons melted.
  • Eggs: 2 large eggs.
  • Salt: 1 teaspoon or to taste.
  • Black Pepper: 1/2 teaspoon.
  • Cayenne Pepper: A pinch for a tiny kick.

Instructions

Prepare the Macaroni

  • Start by boiling your pasta in a large pot. Only cook it for about 5 minutes. It should still be very firm. This prevents it from getting mushy in the crockpot. Drain the water and set it aside.

Whisk the Liquids

  • In a large bowl, mix the milk and evaporated milk. Add the two large eggs and whisk well. Stir in the melted butter and spices. Make sure the mixture is smooth and fully combined.

Prepare the Crockpot

  • Grease your slow cooker with butter or cooking spray. This stops the cheese from sticking to the sides. It makes cleaning up much easier later on.

Layer the Ingredients

  • Place the par-boiled macaroni into the greased crockpot. Add about three-quarters of your shredded cheese. Pour the milk and egg mixture over the top. Stir everything gently to coat the pasta evenly.

The Slow Cooking Process

  • Cover the crockpot securely with the lid. Cook on Low for 2.5 to 3 hours. Check it at the 2-hour mark. Every slow cooker is a little bit different.

The Final Touch

  • Top with the remaining cheese in the last 20 minutes. Let it melt into a gooey layer. Sprinkle some fresh herbs if you like. Serve it hot and enjoy the cheesiness.

Notes

  • Shred Your Own Cheese: Pre-shredded cheese has a waxy coating. Shredding your own makes it melt much smoother.
  • Don't Use High Heat: High heat can make the milk curdle. Always use the low setting for best results.
  • Add Some Crunch: Bobby Flay often adds toasted panko breadcrumbs. Sprinkle them on top before serving.
  • Spicy Kick: Add a dash of hot sauce to the milk mixture. It adds flavor without too much heat.
  • Mix Cheeses: Try adding some smoked gouda for a deeper flavor.
