Ingredients
  

  • 2 lbs Yukon Gold potatoes washed and halved
  • 3 tbsp Extra virgin olive oil
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Dried rosemary or thyme
  • 1/2 tsp Paprika for a smoky color
  • Fresh parsley for garnish

Instructions
 

Prepare the Potatoes

  • Wash the potatoes thoroughly under cold water. Cut them into even halves or quarters. Keeping them similar in size helps them cook at the same rate.

Par-boil the Spuds

  • Place potatoes in a pot of salted water. Bring to a boil and cook for 8 minutes. They should be slightly tender but not falling apart yet.

Drain and Dry

  • Pour the potatoes into a colander. Let the steam escape for a few minutes. Drying them well is the secret to getting a very crispy skin on the grill.

Seasoning Time

  • Put the warm potatoes into a large bowl. Drizzle with olive oil and add all your spices. Toss them gently so every piece is coated in herbs and oil.
