Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup small pasta
  • 1 can white beans
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper
  • Fresh parsley

Instructions
 

  • Heat oil in large pot.
  • Add onion and cook until soft.
  • Add carrots and celery to pot.
  • Cook vegetables for 5 minutes.
  • Add garlic and cook 1 minute.
  • Pour in broth and tomatoes.
  • Bring soup to boil.
  • Lower heat and simmer 20 minutes.
  • Add pasta to the soup.
  • Cook pasta as package says.
  • Add beans and spinach.
  • Season with herbs, salt, pepper.
  • Cook 5 more minutes.
  • Add parsley before serving.

Notes

    • Use good broth for the best taste in your Banchero's soup recipe.
    • Don't cook pasta too long or it gets mushy.
